Who does not love a good mac & cheese? In this case a green mac and cheese created with the wonderful addition of blended basil and spinach. Plus Monterey jack and cheddar cheese. We top it with a bread crumb, Parmesan and parsley mixture.  Freezable.

Our vegetarian version has shredded green cabbage, carrots, cucumbers, red bell peppers, scallions, cilantro, cubed tofu marinated in soy sauce, Vietnamese "nuoc mam", garlic, and 5-spice powder. A zingy dressing with fresh mint, rice wine vinegar, lime juice, nuoc mam, garlic & a little chiil pepper comes on the side!
