Chicken & Rocket Meatballs with Tomato Brandy Sauce
A fun twist on traditional meatballs! These are made with ground chicken, bacon, capers and rocket (baby arugula). Served with a shallot, brandy tomato sauce and garnished with parmesan. Also available without the bacon, but it’s a yummy addition... Freezes.
The vegetarian counterpart is a layer of polenta with Mexican black beans, sauteed mushrooms, onions, garlic, mild green chilies, and tomatoes - then topped with cheddar cheese and roasted tomatoes. Freezes.
